Baby Carrots

“I’m over the fact that baby carrots are lies. So what that they’re carved out of big, ugly carrots?! They are cheap and crunchy, and an ideal solution for lunch on the go. Dipped in hummus or vegan ranch, baby carrots are delicious and filling! Next I’m going to try and dip them in peanut butter.” — Amanda Rock

Celery

“I put it in most of my bases, whether I’m making spaghetti sauce, chili, or veggie stock. It adds a crisp freshness, slightly-but-never-overwhelmingly grassy in the best way. And my favorite late-night snack is a fat celery stick dipped directly in a jar of extra-crunchy peanut butter — a lazy person’s spring roll, really.” — Summer Anne Burton
