Mayo gets a bad rap. Many people view it as “unhealthy” or “unappetizing,” and I’ll admit that the original version of mayonnaise — a mix of eggs, vinegar and oil — was not appealing to me even before I was vegan.

But egg-free, vegan mayo makes it easy for vegans and non-vegans alike to embrace this ingredient and its ability to easily add richness and flavor to almost any meal.

Whether you’re going old school with some Vegenaise or making your own vegan mayo, here are my top five ways to use this versatile condiment:

  1. Any sandwich or sub can be made better with a swipe or two of vegan mayo.
  2. I love to combine vegan mayo with some sriracha and add it to a bowl of rice, tofu, kimchi, and sesame seeds.
  3. My favorite sauce for fries or veggie burgers is mayo mixed with some ketchup, relish, and mustard.
  4. A delicious slaw my family has been making since I was a kid is so simple: just sliced purple cabbage, salt, pepper, vegan mayo, and apple cider vinegar.
  5. Chickpea salad sandwiches, of course! This recipe is a game changer.

Now go forth and enjoy that mayo!
