Growing up, I don’t believe my mother served grits once. At least, not that I can remember. It was among the many foods (charred Brussels sprouts come to mind) that I now adore but she either disliked or had been served to over-abundance in her own childhood and refused to purchase and prepare. As a result, it wasn’t until I started dating my future husband and dining with his family on the regular that grits touched my plate. And it was around his family’s holiday table that I first experienced the revelation that is cheesy sausage grits.

To be frank, it wasn’t the recipe that was revolutionary. In fact, I’m told it originated quite simply from the side panel of a box of corn grits. The conventional recipe with meat and cheese was only a few simple ingredients and the whole thing took less than 30 minutes to prepare. But I was already a vegetarian by the time I was invited to participate in my now-husband’s family Christmas breakfast.
