Vegan Chocolate Cake (and I Mean Chocolate!)
A super quick, super-satiating recipe for the chocolate lover
I stumbled across this recipe in a chocolate cookbook some 30 years ago. It is something I’ve been able to make in a flash with limited ingredients. (That was really helpful in my university days especially.) No eggs or dairy also means I have a super yummy dessert to share with my vegan friends too!
Let me assure you that this is not a half-hearted attempt to throw something together in an effort to accommodate a diet different from mine. It is not an “I hope it’s OK,” kind of dessert. This is a well-loved dessert made many times over. I will whip it up for any dinner guest, no matter their dietary preferences. That is of course if they don’t like chocolate. (Do those people exist?)
We had just enjoyed a lovely dinner out with our friends. “Let’s save a few pennies. Come over for dessert!” we offered. I was looking forward to a longer visit but had a short blast of anxiety as I flipped through a mental Rolodex of my go-to dessert list. What could I make that was super quick but still possessed some decadence?
