Balance is the backbone of any well-made cocktail, and never more so than when you’re dousing it in vinegar — there’s a fine line between an elegant drink and a glass of salad dressing. This idea is nothing new — vinegar-based cordials, known as shrubs, have been consumed for centuries with or without spirits added. Back in January when I wrote about pantry cocktails, I certainly didn’t anticipate a global pandemic keeping most of us confined to our houses. Now that we’re well and truly in one, making drinks with ingredients from the store cupboard feels like a good idea again.
