This Vegan Vanilla Cake Is a Perfect Birthday Cake

Add your favorite frosting and fruit, and you’re good to go

This year for my birthday, I decided to make myself a personal birthday cake because why not? After brainstorming possible cake varieties, I decided to layer fluffy vegan vanilla cake, slices of fresh strawberries, and luscious coconut whipped cream to create a dreamy summer birthday cake.

For the cake itself, I used a recipe from vegan blogger and cookbook author Bianca Zapatka. Since I’ve never baked with aquafaba I was a little hesitant, but the recipe worked beautifully and I totally recommend it to anyone who is aquafaba-curious.
