This Vegan Ice Cream Is Bananas—Literally

It always surprises me when I meet a plant-based eater who hasn’t heard of “nice cream.” And when I do, it's my cue to let them in on this incredible vegan recipe, which couldn’t be easier to make.

The last time it happened was with my friend Sarah. We were on a walk in our neighborhood on a hot, sunny day, and we got on the topic of food. Which, naturally, led into the topic of cool treats for hot days. Sarah will probably be the first to admit she’s not the most active home cook in the world, but I still couldn’t believe she’d never had nice cream.

I excitedly explained the process for this ultra-simple 1-ingredient ice cream alternative from start to finish.

It goes like this.

1-Ingredient Vegan Ice Cream

  1. Peel and freeze some bananas. I like to freeze a bunch at a time and break them into four pieces so I know how many pieces equals one banana, which is also one (small) serving of nice cream.
  2. Once they’re good and frozen, let them sit at room temperature for about 10 minutes, then pop them into your food processor or high-powered blender. Your machine will be a little cranky as you start to blend or pulse, but the bananas…
