The Best Quiche You’ll Ever Have Is Vegan

The top two reasons people tell me they could never go vegan are cheese and eggs. This information is volunteered to me about once a week or whenever someone new learns that I am vegan. I understand and sympathize with their fear, however, I challenge the idea that they will ever have to miss the taste of their beloved cheese and eggs. To prove my point I decided to put together a recipe that usually combines both cheese and eggs and make it vegan.

Enter: The best quiche you’ll ever have.

Ingredients:

  • 1 (9 inches, deep dish) vegan pre-shaped pie crust (or homemade crust if desired). I use this one or this one.
  • Coconut oil cooking spray
  • 7 ounces Creamy Original Chao Slices, chopped. This can be purchased at most local grocery stores or substituted with your favorite vegan cheese.
  • Vegetable oil, enough to coat the bottom of the pan. I use safflower oil.
  • 1 quarter of a medium red onion, chopped
  • ½ cup of your favorite mushrooms…
