Greetings Tenderladies and Tenderlads,

So we made it through another week… that’s something! As the Covid-19 pandemic escalates in my city of Austin, Texas, I’m trying to remain calm and grateful for all that I have to feel thankful for. Including you!

On Tuesday, I asked about delicious meals y’all have been making and eating at home. Carley LaMalva wrote to us about her homemade breakfast burritos (here’s a tasty pic from her vegan foodstagram).

With more time in the morning these days, I’ve been upping my morning meals with breakfast burritos. I start by sauteing onions and chopped potatoes in a pan until the potatoes are cooked through. Then I’ll mix in black beans, crumbled tofu, bell pepper, and tomatoes, and season with garlic, chili, paprika, turmeric, and salt and pepper. I load up a tortilla with the mixture, top with fresh avocado, home-pickled red onion, cilantro, and a squeeze of lime juice. It’s a hearty dish that keeps me feeling full all morning, and the spare tortillas are great for making hummus wraps come lunch time!
