Have you ever been subjected to an icebreaker at work, school, a yoga class? You have likely been asked an existential question like this; ‘Which do you like better, pizza or tacos?’ Your mind likely went blank, panic rushing up your spine. You hear no one else’s answers as your pulse quickens, the spotlight moving closer and closer to you.

I’m right there with you. I could never decide and frankly, I don’t want to live in a world that’s black and white. Tlayuda (tla·you·da) is the answer. A traditional dish in its own right, tlayuda eats like a pizza, tastes like tacos. My version is easy to whip up on a weeknight.

Tlayuda makes its home in Oaxaca, Mexico, a region renowned for its cuisine. It consists of a large, tortilla grilled on a comal and topped with aromatic refried beans, tangy cheese, vegetables, and luscious avocado.
