No More Mr. Nice Cream

The easiest vegan ice cream to make at home is probably “nice cream” — an ice cream made from frozen bananas that is supremely simple and adaptable. But I have a confession that might shock all the vegans out there: I don’t love bananas. Because of my lack of fondness for bananas, I’ve been on a summertime quest to find another easy way to make vegan ice cream at home.

After looking into different easy ways to make vegan ice cream sans an ice cream machine, I found quite a few recipes for no-churn ice cream that used a stand mixer and full-fat coconut milk to create an ice cream base. This technique yields a light and fluffy yet rich and flavorful ice cream that comes together easily and can be adapted to make a variety of different flavors.

I kept it simple for this batch and just made a chocolate ice cream, but you can really make endless flavor combinations with this recipe with or without chocolate. Here are some easy ways to add extra flavor and texture to your ice cream:

  • Mix in nuts or fresh fruit
  • Swirl in jam or fruit preserve
  • Sprinkle on chocolate chips or chunks at the end or mix them in
