It’s October! Huh? Let’s get into it. Here’s what’s new to Tenderly…

Hossein Raspberry, a new Tenderly contributor, wrote about what it was like to go vegan in Iran as a teenager, and how things have changed there since. Here’s a quote:

At first, my family, especially my little brother, couldn’t understand my desire to only eat vegetables. Today that little brother is 26 and embraces veganism. Explaining veganism to my relatives was an entertaining task; in 2006, it was highly uncommon to be a vegan in Iran.

After hours of listening to me gush about the delicious and varied food I eat as a vegan, my relatives became intrigued. Veganism became a much more credible lifestyle to my family when they learned I still eat Persian stews, pizza, and rose-scented ice cream with pistachio. Once I had learned to cook, and learned to make the food I grew up loving, that was the time I came out as a vegan — along with all the scientific facts I had learned about the vegan diet.

These surprising and beautiful photos range from depicting South American wildfires to some very cute possums, and they just might make you look at this magical planet in a new way.

Anouska Parr shares her recipe for the takeaway classics Sweet and Sour Tofu and Sesame NOT-Prawn Toast. These recipes are relatively easy to make and proven to impress even grumpy meat-eaters. You’ll need vegan shrimp or prawns, which is a great excuse to visit a local Asian supermarket (make sure to check out their tofu and mushroom selections while you’re there!)

Apple Honey

Recipe from Laura Vincent

  • 1 cup clear, pure apple juice
  • 1 cup sugar
  • Juice of one lemon (include seeds/pips — they are full of pectin and create a lot of the wonderful texture here)

Place all the ingredients into a small saucepan. Bring to a boil and then lower the heat to a simmer, and let it gently bubble away for about 10 minutes, stirring often, until it has reduced by about half. Remove from the heat, then pour through a small sieve into a clean, hot glass jar. Allow to cool, then refrigerate or store in a cool dark place.

Recommended use: Where honey is specified in both sweet and savory cooking, in hot lemon drinks, warmed and drizzled liberally over pancakes and waffles.
