Homemade pasta does not need to be made with eggs. You can make delicious pasta with just water and flour.

This recipe is so simple you can barely call it a recipe. All you will need is semolina flour and water in a 2:1 ratio by weight. No eggs, no special vegan ingredients—it really is that simple. If you want to see a full demo of this, I recommend checking out this short and simple video!

Once you’ve made your dough, you don’t even need a pasta maker to get cute little pasta shapes. You research the best pasta shapes to make by hand, or just do what I did here and improvise a bit. I used a butterknife to press and roll the dough into small tube-like pasta, and, to my surprise, they turned out delicious!

Fresh pasta is delicate, tender, and the perfect vehicle for flavorful ingredients. For this bowl, I added a bit of pasta water, homemade sage and basil pesto, vegan Italian sausages, caramelized onions, and vegan mozzarella. I love this combo of flavors, but you can go wild with any of your favorite sauces and toppings.
