It’s the heart of the summer (my namesake!) here in Texas, and for me that means that I’ve got corn on the mind. Without roasted corn at the state fair, I’ve been turning to other preparations for this jewel of the season.

I’m excited to share this delicious vegan corn chowder recipe from the founder of World of Vegan, Michelle Cehn, and the founder of Plant-Based on a Budget, Toni Okamoto. The beloved pair of chefs and bloggers have collaborated on a cookbook coming in October, The Friendly Vegan Cookbook: 100 Essential Recipes to Share with Vegans and Omnivores Alike. This recipe is one of dozens of easy-pleasy meals and treats in this approachable and colorful new cookbook, which I especially recommend for home cooks with kids or those that love to entertain (in anticipation of the After Times).
