This delicacy is gone from Taco Bell, but you can still make it at home

Since Taco Bell recently decided to eliminate the classic cheesy fiesta potatoes from their menus, I decided to make a fully vegan version of them, so I can enjoy this delicious dish whenever I want. The original cheesy fiesta potatoes had dairy cheese and sour cream, but my version is 100% vegan. I used a store-bought sour cream and made a simple cheesy sauce to coat the potatoes in.

Cheesy Fiesta Potatoes

Crispy potatoes

  • 3 large potatoes
  • 2 teaspoon baking soda
  • ¼ cup flour
  • 2 tablespoons cornstarch
  • ¼ teaspoon black pepper
  • ½ teaspoon chili powder
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ¼ cup canola oil
