Drinking together, apart

It’s almost happy hour in our time zone (when isn’t it happy hour these days, anyway?), so have a drink (recipe) on us — from Laura Vincent’s newest Bartenderly column, Two Perfectly Balanced Vegan Vinegar Cocktails.

Balsamic Pineapple Daiquiri

  • 2 ounces dark rum
  • 2 ounces pineapple juice
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon sugar syrup, agave nectar, or similar

Shake all ingredients vigorously with fresh ice and strain through a sieve into a chilled cocktail glass. A frothy layer should appear on the top of your drink — this is from an enzyme in the pineapple juice.

A vegan recipe recommendation from the Tenderly archives

Alicia’s Easy Beet Dip. This simple dip allows one to feel like an earthy queen, without much work, and will put the beets you got in your CSA to good use. The flavor goes great with cut-up cucumbers, toast, crackers, and any other usual hummus vehicle. The big bonus is how nutrient-packed this dip is while being essentially a snack — and such a simple one to make, at that.
