Dear Nice Vegan,

I’m a brand new baby vegan and to be totally honest, it hasn’t been as hard as I thought it would be!! I was already a vegetarian for seven years, so I’m not missing meat anymore. And I’ve recently discovered vegan cheese brands that I like a lot more than the Daiya I tried once a couple years ago.

The thing I’m still really missing, though, is EGGS. I don’t know how to bake anything without them, I miss them on toast in the morning, and my “instant ramen, but make it fancy” standby is far less fancy once it’s minus a perfectly fried egg.

Any suggestions for how to sate my egg cravings?
