Arepas Are the Versatile, 3-Ingredient Meal for Quarantine and Anytime

We’re all making do with what we have, and at this point, perhaps you haven’t secured the precooked cornmeal flour required to make arepas. But if you are planning a grocery delivery or supermarket run (with all precautions), I cannot recommend highly enough that everyone obtain a sack of this flour.

Gluten-free, vegan, and delicious, arepas allow even the worst home cook to feel like a hero. With just the flour, water, and salt—along with a bit of oil for cooking in a pan—a flavorful arepa becomes the canvas for whatever is on hand: beans, avocado, veggie burgers, a tofu scramble. And one small package of it provides meals for over a week. The standard preparation of dough makes about 10, depending on the size one goes for, and keeps in the fridge for a few days.

While there are reports of flour and yeast shortages for those who are suddenly very into sourdough or baking their own bread, it’s also anecdotally being said that local Latin grocers are better stocked than their mainstream counterparts. Find a package of P.A.N. (or another brand), whether white or yellow, and get frying.
