A Vegan Pantry List for Easy Cooking

There are many ways to make going vegan and staying vegan easy on both budget and planning, but the best way that I’ve found is making sure I always have a stock of specific pantry ingredients on hand that I can round out with farmers’ market produce and any other fancier items I’ve acquired.

This requires minimal shopping — I hit the supermarket biweekly — just regular stock-taking of what’s about to run out and what gets used most. Here, my personal pantry list that keeps me fed, happy, and somehow eating a wide variety of meals.

Beans, Dry and/or Canned

The bread and butter, so to speak, of vegan cooking. Making dried beans is always a great meditation, but it’s nice to also have some cans on hand for when time is of the essence.

Canned Coconut Milk

My most precious essential: full-fat coconut milk, which I use in curries, soups, and baking. I also keep one can in the fridge for easy whipped cream access.

Canned Whole Tomatoes
