As I had a drink before my flight to Buenos Aires this past June, a man struck up a conversation with me about where I was heading. “I hope you like steak,” he said, and I smiled with lips tight. Of course I was going to the Argentine city to sample its vegan cuisine, but he didn’t need to know that. I appreciated his confirmation of the way this city appears in the popular imagination — all asados and high-end restaurants that find spots on the World’s 50 Best list, the kinds of places where beef reigns supreme and no one shies away from butter.

What I found instead was a quietly brilliant smattering of vegan restaurants amid the city’s excellent bookstores, bars, and record shops.
