As always, hope you are all staying well and safe. ❤️

This past weekend was St. Lucia Day, a Swedish holiday meant to bring about hope and light during the darkest time of the year. During a year that has been so difficult and unforgiving, this day was a reminder for me that it is possible to hold two things at once; to hold grief and hope and see that both are important and true.

To honor the holiday, I veganized this recipe for St. Lucia buns — a delicious, lightly sweet saffron bun—with the help of oat milk, Tofutti sour cream, vegan butter, and flax eggs and the result was delicious. These gorgeous buns are a traditionally made and eaten during the winter holiday season, but can really be made anytime you’re in need of something comforting.

Aside from these Swedish buns, here are a few things to check out this week:

  • As part of Teen Vogue’s end-of-year Brighter Sides series, politics editor Lucy Diavolo wrote about this historic year of activism and organizing. “I hope I’m not alone in feeling that 2020 has shown glimmers on the horizon that a better world might actually be within reach.
