Thanksgiving is a time for one-upmanship. It is a time to give into your ruthless competitive instincts, to indulge in bitter rivalry, and (if necessary), to cheat, brazenly. At the end of Thanksgiving, there will be only one winner — the person who made what everyone agrees was the tastiest contribution to the feast — and when you’re vegan, especially if you’re contributing a dish at a nonvegan Thanksgiving, the stakes couldn’t possibly be higher.

That’s how I approach the holiday anyway. For years, my wife and I were the only vegans at a recurring pot-luck-style Friendsgiving, and we spent hours conspiring, practicing, and conniving so that at the end of the meal, the turkey-eaters would grudgingly agree that our Seitan en Croute was actually the tastier main dish. And this year (after a move), our Friendsgiving will be entirely composed of vegans, and so the stakes are even higher, as vegans are wily and sneaky, and they’ve had your Seitan en Croute before, and maybe even made their own, and if you’re going to win Thanksgiving against other vegans, you have to be nastier and trickier than anyone could possibly imagine.
