- Thin sliced, sprinkled with a good kind of salt (like Maldon Flakes), eaten straight off the cutting board.
- Bruschetta: Goddess’s gift to vegans ordering at italian restaurants. For making it at home: fry some garlic for a minute in a pan with hot olive oil, then transfer that oil to a bowl with your favorite kind of tomato (halved if they’re little, sliced or diced if they’re biggies), some chiffonaded (chiffomade?) fresh basil, salt, maybe some dried oregano if you’ve got it. Toss to combine and then stick it in the fridge while you toast slices of a crusty baguette in a pan with Miyoko’s or Earth Balance vegan butter, then serve with the tomato mixture on top of the toasty bread and top with red pepper flakes. Yum.

- A tomato sandwich, favorite of vegetarian kids since time immemorial: two pieces of white bread spread with generous vegenaise, sprinkled with black pepper, and stuffed with ripe, salted tomatoes. You could add vegan cheese if you wanted, or toast the bread after rubbing it with a freshly halved garlic clove.
