1. French fries → Breakfast tacos

I like to save fries and then chop them up into small cubes the next morning for delicious breakfast tacos. I just toss the squares with some extra olive oil, smoked paprika, and nooch, and them reheat them in a hot skillet before folding them into tofu scramble with vegan cheese or or beans topped with fresh pico, hot sauce, and avocado.

2. Mashed potatoes → Bubble and squeak

Leftover mashed potatoes are a perfect start to making bubble and squeak, the traditional British breakfast bake that also includes cabbage and can include any miscellaneous veggies you feel like roasting.

3. Roasted or boiled potatoes → Nut-and-dairy-free queso

You can toss all kinds of things into a blender with nutritional yeast and get a delicious cheesy dip out of it, but roasted potatoes are an easy one. This recipe calls for boiled potatoes, but roasties work too.
