I remember back in high school, I hated breakfast despite getting hungry by the time I applied my mascara every morning. But I was too busy for breakfast. I always woke up late and took too long to do my hair that looked like crap anyway. Following a thorough pestering from my mom moments before I bolted to the bus stop, I would usually grab a highly processed granola bar or a sugary protein shake that was terrible for me. Since then, I’ve changed and now consider myself a breakfast queen. I’m not sure what happened. I think I realized how good I felt when I ate breakfast regularly. Now I can’t go a day without it! Whatever dietary lifestyle you follow, I hope you enjoy these easy vegan breakfast fixes. They’re vegan for the animals, the planet, and for you! : )

1. Avocado toast with your choice of bread/bagel

  • Add different combinations of tomato slices, arugula, roasted red peppers, roasted chickpeas, flaxseed, onion powder, fresh garlic, garlic powder, red pepper flakes, balsamic vinaigrette, black pepper, pink Himalayan salt, basil, parsley, sesame seeds, everything bagel seasoning, artichoke hearts, etc.

Get fancy with it!

2. Your choice of bread/bagel with nut butter including but not limited to peanut butter, almond…
