When I first decided to transition to plant-based eating, my grandmother was deeply concerned. Not because there wouldn’t be any meat in my future — it was eggs she was worried about.

“How will you make anything without eggs?” she asked before pulling another batch of brownies from the oven. As we dove into the decidedly not-vegan brownies, I realized: I had no idea. I still hadn’t been able to give up sweets like this one for that exact reason.

Months later, I spend my Saturdays whipping up my own version of fudgy brownies, no eggs needed. I’m eating many of the same comfort foods I’ve always craved — with a little ingenuity. I’ve put together the 10 hacks I’ve learned that make any vegan dish taste great, whether you’re new to a vegan lifestyle like me or not.
